That little coffee cart in Portland fixed my pour over game

I was in Portland last weekend for a friend's thing and wandered into this tiny cart near the farmers market, no name even on the side. The guy running it, maybe 60 years old, he asked if I wanted to taste the difference between two beans before I ordered. He did this 20 second bloom, slow spiral pour, total time like 3 minutes for a cup, and I swear the sweetness hit different than my home setup. I asked what I was doing wrong with my own V60 and he just said my grind was too fine and my water temp was too low, 195 instead of 205. Bought a bag of their Ethiopia natural and tried his exact method this morning, first cup that actually tasted like stone fruit instead of bitter dirt. Has anyone else had a random cart or stand totally reset how they brew at home?
