Watched a barista in Portland dump a whole batch of pour-over down the drain

They said it was 'over-extracted by 15 seconds' and now I'm paranoid about my own timer. Anyone else get thrown off their game by something that specific?

That's wild, but honestly your taste buds are the real timer. If it tastes good to you, you're fine.

You really think those 15 seconds don't matter? I read this whole thing from a barista champ who said that extra time is the difference between bitter and balanced. It pulls out the bad flavors, @sage_schmidt6. Coffee is NOT just coffee, that's like saying all trees are the same. A few seconds can totally wreck the taste. It turns something smooth into a sour mess. That's why timing is a big deal.
