I used to toss all my veggie scraps in the compost bin without a second thought. Now I save carrot peels and onion skins for broth first. Changed after reading a post about how much flavor gets wasted. Anyone else started doing this?

Oh man, this is totally me. I used to just toss everything too, like it was just trash, no thought at all. But then I saw a video of someone using broccoli stems and carrot tops for a soup and I felt so dumb for throwing away all that free flavor. Now my freezer is basically a veggie scrap graveyard, and I'm always trying to find new uses for them. Have you tried using potato peels to make crispy chips? That's my latest thing, and it's kind of a game changer. It's funny how something so simple can make you feel like a real cook.
