My neighbor gave me a weird tip about toasting bread

Old guy next door saw me burning toast on Monday. He comes over and says "try putting it in the toaster twice on low instead of once on high." I did it and honestly the texture was perfect. Now I'm stuck wondering if I should keep doing his method or go back to normal. Anyone else have a random neighbor trick that actually worked?

The double toasting trick is solid. @leep89 nailed it with the steak comparison, same principle applies to a lot of cooking. I've done that with frozen waffles for years, keeps them from getting rock hard on the edges.
