Unpopular opinion: I think people overrate how fast a simple plumbing fix should take

Everyone online said swapping a bathroom faucet was a 45 minute job, but mine took over 3 hours because the old supply line nuts were completely rusted shut. Has anyone else found that basic home repair guides just skip the worst case scenarios?

Those guides are usually written by pros who have the right tools and have seen it all. A rusted nut is a basic variable they expect you to handle. If you don't have a good basin wrench and penetrating oil, of course it'll take longer. The time estimate is for the task under normal conditions, not for every possible hang-up.

Normal conditions" meaning a brand new house built yesterday with magic tools. My kitchen sink is held together by the same ancient grime as the rest of this place.

Tell me about it. My first faucet swap turned into a whole weekend thing. I spent more time driving back and forth to the hardware store for a sawzall than I did on the actual install. Those guides assume your house isn't held together by rust and wishful thinking.
