Serious question, was I really supposed to be cleaning my grease trap with a shop vac this entire time?
So I've been running a small food truck here in Detroit for about 18 months and I always thought I was being smart by sucking out the grease trap with a wet/dry shop vac every Friday night. Felt like a genius, saved me from calling a service, only cost me the vac and some degreaser. Then a guy from a commercial kitchen outfit over on Michigan Ave came by to quote me on a hood cleaning and saw me doing it. He just stared for a sec and goes, 'you're pulling the top layer and pushing the rest down the line.' Turns out I was basically forcing the heavy stuff further into the drain and probably into the city sewer, which explains the $340 backup bill I got in March. He showed me the right way to skim it and told me a shop vac on hot grease is also a great way to fry the motor, which mine is now doing. So now I'm out a vac, a drain cleaning bill, and I feel like a real dummy. Any other truck owners in here have a grease trap routine that doesn't involve me learning this the hard way?
