Spent a full weekend fixing drywall tape seams, then found out the wall was bowed

Last month I patched a bedroom ceiling in my 1970s house. Took me two days to mud and sand the tape seams until they looked perfect. Next morning I walked in and saw this subtle wave across the whole ceiling, like the drywall was breathing. Turns out the joists sagged over the years and the sheets were following the curve. All that taping was useless because the surface itself wasn't flat. I ended up using a straightedge and shims to pull the low spots, then re-taped everything. Cost me an extra $40 in materials and a lot of patience. Has anyone else dealt with a bowed ceiling where the fix was more about framing than finish work?
