After 3 tries I finally got a perfect batch of macarons last night

My kitchen counter was a disaster zone for the last month but that first bite was SO worth it. Feet came out right and everything. Does anyone else get nervous the whole time they're piping?

The shaking hands thing is real. I watched this baking science video that explained how the humidity in the air messes with the drying time before you even get to the oven part. That's probably why my first two batches had no feet at all, just flat sad circles. It took me like three more tries with a dehumidifier running in the kitchen before I got it half decent. The whole time I'm piping I'm holding my breath basically.

Wait, are you serious about the dehumidifier? That's genius actually. I never thought about controlling the room humidity before piping. I just assumed my batter was always the problem. Might have to try that trick next time.
