Hot take: Picked a 4-burner gas model over a flat top for my diner kitchen and I'm second-guessing it
I opened a small breakfast spot in Portland last spring and had to choose between a 4-burner gas range and a flat top griddle. I went with the gas range because I thought it was more flexible for omelets and sauces. But now after 6 months, my breakfast rush is all eggs and hashbrowns and the flat top would have been way faster. Has anyone else regretted this choice or found a way to make the gas setup work better for high-volume breakfast?

Man that sucks, I feel for you. It's rough when you realize the flat top wouldve been the move a few months in.
