Tried that viral bento box meal prep system and ended up with mushy rice and soggy veggies by Wednesday
I followed that TikTok trend where you pack 5 bento boxes every Sunday for the work week. Used 3 cups of jasmine rice and pre-cut broccoli and carrots. By day 3 everything was steamed in its own moisture and tasted like wet cardboard. Has anyone else found a better way to keep bento box ingredients from getting soggy?

Your mistake was using precut veggies. They release way more moisture. Also try cooling the rice completely before packing.

But here's the thing nobody talks about - the type of vinegar you use makes a huge difference. I used to just grab whatever rice vinegar was on sale, and my sushi rice was always either too sticky or too dry. Turns out, seasoned rice vinegar is way more forgiving than the plain stuff because it has that sugar and salt already balanced. And honestly, I've started adding a tiny splash of mirin to mine for that extra shine and sweetness. It's changed everything for me, no joke.
