Tried a 12 inch taping knife on a ceiling instead of my usual 10 inch. The extra two inches made a huge difference.

Oh man, you're totally right. That extra width lets you float a joint so much smoother with fewer passes. I fought with a 10 inch on my kitchen ceiling for years before I switched. It just holds the mud better and flattens it out without digging in. Makes the whole job way less of a headache.

What size did you switch to, a 12 inch? I've been using a 10 for everything and maybe that's my whole problem. The corners on my last job were a nightmare, kept leaving ridges. Did you notice a big learning curve going wider, or was it easier right away?

I went up to a 12 and honestly the first time I used it I nearly took out a light fixture. Takes a day to get the feel but once you do you won't go back.
