I tried freezing my garlic and ginger instead of mincing fresh. Total game changer.
I used to spend like 10 minutes every night chopping garlic and ginger for stir fries. Then my sister from Austin told me to just freeze whole cloves and peeled ginger chunks. Now I grab a frozen clove and grate it on a microplane in 10 seconds. No sticky fingers, no waste. Works way better than the jarred stuff too. Anyone else do this or am I weird?

My buddy @alex_hall91 put me onto something similar but with lemongrass. Freeze whole stalks and just grate what you need straight into the pan. Changed my Thai cooking game big time. I was scraping my microplane on a rock hard clove of garlic the other day and my wife walked in and asked if I was grating cheese into a stir fry lol. Guess it does look a bit weird from the outside. But hey, no sticky garlic fingers and no crying over onions either if you freeze those too.

I just buy the pre-minced garlic in a jar and call it a day, but now you got me thinking I've been missing out this whole time. Never even crossed my mind to freeze whole cloves and grate them like that. That's a level of kitchen prep I did not see coming.

Jarlic is fine for weeknights. But that frozen garlic trick is a game changer. Way better than the jar stuff.
