Just spent 4 hours yesterday trying to get a clean clinch on a draft horse with a persistent hoof wall separation. The owner said it 'wasn't that bad' last month.

Ugh, classic owner timeline. That "wasn't that bad" line always means it's been brewing for ages. Four hours sounds about right to really dig out all that hidden junk. I'd have gone with the Dremel method too, it's the only way to get a surface that will actually hold a pack. Did you end up using a clay-based filler or something else?

Had a case like that last spring. Ended up using a Dremel with a sanding drum on low speed to really clean out the fissure before packing it. The copper sulfate paste held way better after that.
