Hit 50 jars of hot sauce this weekend and I'm ruined
I started fermenting peppers back in April just for fun, and this Sunday I counted up 50 jars of different hot sauces sitting in my basement. I never meant to make that much, but once I got hooked on trying new pepper combos like mango habanero and smoked ghost pepper, I couldn't stop. Now I'm giving them away to anyone who visits just to clear space. Has anyone else ended up with way more product than they planned after a fermenting kick?

My buddy got into making kimchi last fall and now his fridge smells like a science experiment gone wrong. He showed up at my door with three mason jars of the stuff, said his wife banned it from the house. I tried some, it was good but I still have two jars in my back fridge that I'm scared to open. Did you ever get a fermentation project that just took over your life like that?

Oh man, I've totally been there. My sourdough starter basically lived in my fridge for two years and I was too scared to throw it out. You should crack one open though, worst case it just tastes like fizzy cabbage.
