Walked into a kombucha brewery in Portland and smelled something off

The place had 12 stainless steel tanks but only 2 were actively bubbling, the rest had a weird vinegar smell that meant they'd gone way past ferment. Has anyone else walked into a place that looked serious but was clearly cutting corners on their batches?

Classic Portland kombucha bros chasing trends instead of making good booch. Those vinegar tanks are basically a money pit, not a batch worth fixing. Kinda sad when the equipment says "pro" but the product says "whoops.

Hold up, those are actually some pretty standard oak barrels for aging, not vinegar tanks. You might be thinking of the plastic carboy setup down the street.
