Roast chicken leftovers I was convinced would be boring turned into the best tacos I've ever made

I had a whole roasted chicken from Sunday sitting in my fridge and was so tired of the same old sandwiches or soup. My buddy kept saying shred it with some cumin and chili powder then crisp it up in a cast iron, and I thought he was crazy. Last night I finally caved after three days of staring at that chicken, and I've never been so wrong about a food idea. I used about 2 cups of shredded meat, fried it with a little oil and the spices for 5 minutes, and threw it on corn tortillas with pickled onions and cilantro. Honestly, it was way better than any chicken taco I've had at a restaurant. Has anyone else tried something they thought would be trash and it turned out incredible?

Start noticing how many of the best things in life come from stuff you almost threw away. Leftover chili that sat in the fridge for two days tastes way better than fresh. Stale bread makes the best french toast or breadcrumbs. Old bananas that are brown and spotty make banana bread that actually has flavor. Even relationships, the ones that almost fell apart and you had to rebuild from scratch, end up stronger than the easy ones. Your chicken tacos just proved that same rule applies to dinner too.

Yeah @casey843, but why does stale bread actually work better? Is it a moisture thing or just us settling for less? I've had leftover pizza that was somehow better cold than fresh out of the oven too. Makes you wonder if our taste buds are just lying to us half the time.
